      <image:title>Blog 3 - Essential Homebrewing Equipment - I’ve shared some tips for how to start homebrewing here, including links to all-inclusive recipe and equipment kits. I recommend an all-inclusive equipment kit to those that are just getting started in homebrewing. There is room for improvement with these kits for those that have completed a few brew days. I put together this list of essential homebrewing equipment required for all-grain brewing after much experimentation over the course of many brewing sessions, tailoring the list for small-batch brewing, specifically batches between one and three gallons.</image:title>

Small-batch brewing offers a low point of entry into the hobby by repurposing equipment already found in your kitchen. This will serve as your brew kettle and is a critical part of your homebrewing setup because it is used during mashing and boiling.</image:title>

Any pot with a one-gallon capacity will work. I highly recommend a slotted, metal stirring spoon for stirring the mash and to use during sparging. I prefer metal over wood or plastic because it it easy to clean and sanitize. A glass, heatproof measuring cup comes in handy during the sparging process.</image:caption>

For single-gallon batches, you may only need a few grams of hops at a time. The scale on the left served me well in my early homebrewing days. Eventually I upgraded to the jewelers scale on the right because it can accurately measure in increments of 0.01 grams. That level of precision is necessary when it comes to making water chemistry adjutments (more on that later).</image:title>

Water chemistry is a big topic that deserves its own post. In the meantime, think of water chemistry adjustments as you would when you season food with salt. Your food tastes fine without it but with the salt, it tastes like a better version of itself. Water chemistry adjustments are like for beer. Your beer will generally be fine without them but treating your water will really enable you to finely 'tune' your beer's flavor.</image:title>

Myself and the 20 other students that joined got an all access, behind-the-scenes look at what goes in to a brew day at a commercial brewery from start to finish. We were allowed to pepper our gracious brewmaster hosts with as many questions as we had. One student asked what the capacity of the brewhouse is - in other words, how much beer could they make at once. The answer was short and sweet - 15 barrels.</image:title>

      <image:title>Blog 3 - Carbonation Drops vs. Priming Sugar - As mentioned in the learn to bottle post, when bottling your homebrew you have two main options for carbonating beer - carbonation drops and priming sugar.</image:title>
      <image:caption>Regardless of the method chosen, both do the same thing - they introduce a little additional sugar to the beer with the intention of starting fermentation again. When transferring your beer from carboy to bottle, you left most of the sediment and yeast behind but there still will be some residual yeast caught in suspension in the beer. You can harness the power of this yeast through fermentation by feeding it a little extra sugar which will yield two byproducts - a trace amount of alcohol and more importantly, the carbon dioxide gas that will carbonate your beer. The cap that you’ve attached to the bottle will trap in that CO2, keeping the bubbles in your bottle (remember that during fermentation we diverted this gas out of your beer). Whatever method you decide to use will come down to weighing the pros and cons of each.</image:caption>

As I’ve widened my horizons my palate has evolved over the last five or so years. What do you notice? On the right we have a Lager. On the left we have an Ale - specifically an IPA (India Pale Ale). If we look just at those two words, Lager and Ale, we’ve pretty much got the two main categories of beer covered. That’s right, all beers are generally either Lagers or Ales. Let’s now look at the main differences between these two major beer categories and how these differences can be harnessed during the brewing process to produce either an Ale or Lager.</image:title>

      <image:title>Blog 3 - Why Did I Launch Small Batch Brewing? - We homebrewers are a lucky bunch - there is no shortage of information available to us in the form of countless books, websites, Facebook groups, YouTube channels, and local meetup groups covering a wide range of topics from ingredient and equipment selection to advanced fermentation. Through my research, I deduced that the five gallon sized batch has become the ‘standard’ for a homebrewing setup. There are other sizes that seem common too - 7.5, 10, 2.5, and 3 gallons - but most recipes I’ve found are written with a five gallon batch size in mind. Additionally, many of the slick all-in-one electric brewing systems or the custom three-vessel systems that homebrewers piece together are designed to produce a minimum of five gallons. Let me be up front about something - I have no problem with systems of this size. I’ve seen some pretty amazing five gallon (and larger) sized setups from homebrewers that have been seriously brewing a lot longer than I have and it’s inspiring to see such passion and devotion to this craft. When I first got started I knew that a five gallon batch was going to be too big. I lived in a house with a small, poorly designed kitchen.</image:title>
